In the past Cream was made by the gravity method. The milk is poured into a large vertical pan and it sat for about two hours allowing the cream to rise to the top of a pan then skimming it off leaving the skimmed milk with approximately % 25 of fat in it.

With new centrifuged cream separator Whole Cow or Goat milk is poured into a bowl, and passed through a central tubular shaft. A Motor or a crank rotates the bowl at a rate of from 7000 to 9,000 rpm depending on the type and the temperature of the milk. The spinning of the bowl causes the milk to be separated into layers. The cream and skimmed milk each comes out of a different spouts and get poured into separate collecting vessels.

The centrifuged cream separator makes it possible to control the amount of butterfat remaining in the milk. The faster the bowl spins the heavier the cream.
